Hawaiian Kabobs

Travel is limited right now and summer is in full swing. What are we all supposed to do? Pour a cold drink and find a BBQ. We have you covered!

Using fresh tomatoes and peppers, pork, bacon and boozy pineapple, we have brought the Hawaiian islands to your backyard BBQ. The best part? These bites are on a fun kabob skewer! You’re welcome.

This recipe for Hawaiian kabobs encompasses so many incredible island flavours. The sweetened pork and rum soaked pineapple is the perfect combo to fresh peppers and tomatoes.

Your taste buds will thank you as you pull each bite from it’s skewer. And don’t worry, the alcohol in the rum will have baked off so the kids can enjoy these kabobs too. In fact, I believe the words we heard from our kids were “this pineapple is amazing! It’s so good!”

We love summer and love this recipe. Grab your kabob sticks – metal or wood, and let’s get going! It’s too good just to simply talk about it….Lol.

First things first, start the pineapple by soaking it with rum. Literally, cut up bite sized pieces and pour rum all over it. Leave them to soak and marinate for 30 min. Then you can start wrapping the boozy pineapple with bacon and brown sugar.

While the bacon wrapped boozy pineapple are marinating and baking, go ahead and prep the rest of your kabob. Chop the peppers, wash the tomatoes and pull out your finest plastic bag for shaking spice on your pork chops.

This pork is seasoned with sweet brown sugar, garlic and cinnamon. It creates a unique pairing with the boozy pineapple and veggies. A sweet summer grilled kabob that exudes the flavours of Hawaii.

Once the pork bites and bacon wrapped pineapple is ready to go, begin skewering it all together. Go ahead and start stacking your skewers for the grill. We promise you’re in for an incredible treat!

Bring the tastes of the Hawaiian islands to your backyard BBQ! These kabobs are stacked with sweet pork, peppers, tomatoes and boozy bacon wrapped bacon. We promise a fun dinner that your entire family will love.

Ingredients

  • Bacon Pineapple Bites
  • 1 whole pineapple cut into bite sized chunks

  • 4oz. rum

  • 1 pkg gluten-free bacon, slice each piece of bacon in half

  • approximately 1/2 cup brown sugar – use 1 tsp of brown sugar for each slice of bacon

  • Pork Bites
  • 350g boneless porkloin center chop (approximately 3 chops)

  • 1/4 cup brown sugar

  • 2 tsp cinnamon

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • Vegetables
  • 2 coloured bell peppers, chopped into bite sized pieces

  • 1 cup grape or cherry tomatoes (approximately 16-20 tomatoes)

Directions

  • Preheat oven to 425°F
  • Using a shallow dish or plate, pour rum over pineapple bites. Let pineapple marinate in rum for 30 minutes.
  • Cut pork chop into bite sized pieces. Using a plastic sealing bag or container with lid, combine ‘Pork Bites’ ingredients. Shake well to coat.
  • Cut bacon in half and sprinkle approximately 1 tsp of brown sugar over each piece.
  • Place a boozy pineapple chunk on piece of bacon and roll. Secure bacon with a toothpick if necessary. Place on baking tray.
  • Bake pineapple/bacon bites for 15 min. (Bacon will not be fully baked – finish baking on BBQ)
  • Chop bell peppers into bite sized chunks.
  • Preheat BBQ.
  • Once bacon/pineapple bites are finished baking, begin skewering your kabobs. Alternate peppers, tomatoes, pork and bacon/pineapple chunks.
  • Using low heat on BBQ, grill kabobs 4 minutes each side.
