C squared date balls

Ugh. Lunches. Who truly enjoys packing these every day? Whether it’s for your kids or even yourself, it’s always the last thing we want to do. These carrot, date balls will be a game changer for quick snacks or add-in’s on lunches. We love them, our husbands love them and….our kids love them!! We think you’ll agree. They’re super!

The best part about this snack is that it boosts a healthy bite AND it’s really easy to make. Whip these little balls up within minutes. Spoiled by our Vitamix again, it works great to mix up this recipe. Although, I’m not sure every blender could handle the consistency of the ingredients. We don’t want to be held accountable for blenders burning motors…LOL. So, we also recommend using a food processor. It will have no issue mixing, cutting and combining everything.

Keeping this recipe accessible, we kept the ingredients easy too. It literally uses 6 ingredients. No refined sugars and did we mention, our kids LOVE these?!

As we mention not only do the kids love these. You’re likely to find them in the glove boxes of our vehicles during errands or in Stacey’s basket for the barn…Ha! Even the horses are curious with the smell of carrots!

Ingredients added, turn it on and blend away! When everything is all combined whether using a blender or food processor, start rolling in coconut and forming those balls.

These 2 bite coco-carrot date balls will not disappoint. They are packed with an energy punch that will keep you moving and full through your day. The perfect snack to add in a lunch or throw in your bag for those times when you need ‘just a little something’. No cooking required and can be prepared within minutes. Entire family approved.

Ingredients

  • 2 cups pitted dates

  • 1 cup grated carrot

  • 1 cup gluten-free oats

  • 3/4 cup shredded unsweetened coconut**

  • 1 1/2 tsp cinnamon

  • 1/2 tsp salt

Directions

  • Add all the ingredients into a blender or food processor.
  • Combine well to ensure everything is well chopped and mixed.
  • Roll into balls. You should have approximately 24, two inch balls.
  • Roll again in coconut to cover entire ball.
