Italian Grilled Cheese

Our families both LOVE grilled cheese. Who doesn’t love a good melted sandwich filled with ooey-gooey cheddar?! We decided though the love doesn’t need to stop there.

With the tomatoes on the vine finally red and the basil going to seed, we set out to create a grilled cheese filled with fresh basil and tomatoes from our gardens. Italian inspired, we created a sandwich using garlic butter, tomatoes, prosciutto, mozzarella and parmesan cheese!

Simple ingredients, this sandwich will take your grilled cheese to the next level! It’s so good. Cheese enveloped tomatoes spilling out from between 2 slices of french bread, and then topped with grilled proscuitto; we promise everyone will love this unique combo.

To get started, first make the garlic butter. This is a simple step just by stirring in Italian seasoning and garlic powder with regular soft butter. Go ahead and spread it thinly on the outside of your slices of bread.

Once the garlic butter has been spread, go ahead and build your grilled cheese. Don’t forget that the buttered sides go to outside of the pan to brown. Then it’s cheese, tomato, basil, cheese, bread. Lol, follow the pictures below…and don’t worry – we haven’t forgotten about the prosciutto!

In case you didn’t catch it with the pictures, using a lid over your grilling or frying pan will help melt the cheese. You’ll want to ensure your sandwich is completely melted and grilled on both sides before adding the final cheese and prosciutto to the outside.

Turn your grilled cheese upside down. This amazing sandwich encompasses garlic butter, both mozzarella and parmesan cheese, tomato and basil, and an outside crust covered with grilled prosciutto!

Ingredients

  • Garlic Butter
  • 1/2 cup soft butter

  • 1 tbsp Italian seasoning

  • 2 tsp garlic powder

  • Sandwich
  • 8 slices of gluten-free french bread

  • 2 1/2 cups shredded Mozzarella cheese

  • 1 1/2 cups shaved Parmesan cheese

  • 2 roma tomatoes thinly slices

  • 8-12 basil leaves

  • 4 slices of gluten-free prosciutto

Directions

  • Make garlic butter. Add Italian seasoning and garlic powder to soft butter and stir well. Whip butter using a spoon to incorporate the spices well.
  • Spread a thin layer of butter on the outside of each piece of bread.
  • Warm grilling or frying pan to medium/low heat.
  • Place 4 slices of bread, buttered sides down, in pan.
  • Begin building sandwiches by layering cheese, tomatoe, basil, cheese and another piece of bread. Buttered side up.
  • Cover pan with lid when all 4 sandwiches built. Cook for approximately 2-3 minutes, then flip sandwich and cook again 2-3 minutes.
  • While the second side is cooking, add a thin layer of cheese and slice of prosciutto to the top slice of bread that is completely grilled. Place the lid back over the pan.
  • Once the second side is finished grilling, flip again to sear prosciutto for 30 seconds.
