Chicken Parmesan

We’re pretty sure this is one of the greatest comfort foods of all time. What could be better than breaded chicken (of course gluten free bread crumbs), covered in cheese and swimming in a bed of tomato wine sauce?! It’s Friday, let’s celebrate with our families in that we’ve all survived with another unprecedented week.

With simple ingredients, this recipe is perfect for Friday nights. The start of a weekend when an awesome meal is needed to celebrate the work week – but with little effort. This chicken parmesan also serves gourmet when company comes. Hold this one in your mitt for the future. There will be a day again when you’ll invite people into your homes šŸ™‚

First things first you’ll need to bread your chicken. We like to tenderize chicken breasts simply with a meat tenderizer. This makes for a much more juicy bite later.

You’ll then start dredging your chicken through CUT flour. Next, combine your eggs and milk together. Follow dipping your meat through this and then into the gluten free Panko bread crumbs. Make sure to coat the chicken well in the bread crumbs.

Melt butter in a saucepan and you’re ready to brown the chicken until golden. Oh! We forgot to mention that because it’s Friday, pouring a glass of red wine while you do this makes everything better…LOL

Once the chicken is golden, place it simply into a baking dish. You’ll pour your favorite canned tomato sauce (yes, you can make homemade tomato sauce, however, remember we told you Friday was gourmet but easy?….use the bought one!) over the chicken. Of course add some wine and top with cheese and a couple dried herbs. You’ll bake this for approximately 45 minutes. That’s it! It’s seriously that easy. Serve with some pasta, maybe a salad or cooked veggie and you’ll have a full meal.

This recipe defines comfort food. Chicken blanketed in tomato sauce, cheese and wine. Need we say more?! You don’t need a reason to celebrate, just pour the wine and get cooking.

Ingredients

  • 6 tenderized chicken breasts

  • 1 cup CUT flour

  • 2 eggs

  • 1/2 cup milk

  • 2 1/2 cups gluten free Panko bread crumbs

  • 1/4 cup butter for frying

  • 3 cups canned tomato pasta sauce

  • 2 cups grated mozzarella cheese

  • 1/4 cup parmesan cheese

  • 2 tbsp Italian seasoning

Directions

  • Preheat oven to 350Ā°F
  • Begin by tenderizing chicken breasts.
  • Dredge tenderized chicken through CUT flour.
  • Combine eggs and milk and whisk well.
  • Dip floured chicken through eggs and milk mixture and then into Panko bread crumbs. Ensure to coat well.
  • Melt half of the butter in frying pan. Begin to add chicken breasts. Add more butter as needed as you fry chicken breasts. Fry them until golden.
  • Place golden fried chicken in baking dish. Pour over tomato pasta sauce and wine. Top with both parmesan and mozzarella cheese.
  • Sprinkle Italian seasoning over top and bake for 45 minutes.
