Saskatoon Pie

Forks up! It’s pie time!! Pie seems like it’s a whole big deal to make…we’re here to promise it really isn’t. Honestly, we know you all can do this. Not to mention this activity could be a great one to involve the whole family if everyone is hanging around. Something to look forward to…PIE 🙂 What is it that’s just so incredibly special about a piece of pie? Soul food we call it.

For those of you who are asking maybe what a saskatoon is?…you haven’t lived till you’ve had a saskatoon. These purplish little berries look similar to a blueberry. They are however related to the apple family, and have a nutty sweet taste. Native to North America, we are lucky to have them grown in our Calgary backyards. Saskatoons are loaded with vitamins and minerals, and they contain a ton of fiber and antioxidants!

Using our pie crust recipe from previously in our blog https://cutcooking.com/gluten-free-pie-crust/ , go ahead and make a shell. We suggest pre-baking this slightly, approximately 8 min at 350°F. While this is baking, you can go ahead and start with your saskatoon berry filling!

Once the berries have come to a rolling boil, you’ll add the cornstarch and water mixture. This will thicken the berry compote and allow your pie to not run everywhere when cooled and you’re cutting it for dessert!

We love to make top crusts using the cookie cutters! Traditionally this isn’t how a pie crust may look but we have really grown to love our unique tops. The kids have also thoroughly enjoyed this different look on the crust too. It allows them easily to be involved with the baking process and you can make some pretty unique pies!! Try it! Have some fun.

Pour your cooled berry filling into your shell and start cutting away. We used all different sizes of stars on this one but the options are endless!

Once you’re finished topping your pie, paint with milk (or egg) and sprinkle with a bit of sugar. Then off into the oven for the final bake.

Truly Canadian soul food, this pie bursts with saskatoon berries. We promise this pies sweet, and nutty almond flavor will win anyone over!

Ingredients

Directions

  • Preheat oven to 350°F
  • Combine saskatoons, sugar, 1/2 cup water and lemon juice in medium saucepan.
  • On medium/low heat, cook berry compote, stirring often until begins to boil.
  • Mix corn starch and 1/4 cup COLD water in small container.
  • Add cornstarch mixture to boiling berries.
  • Stir really well and when compote begins to thicken, remove from heat.
  • Continue to stir occasionally and let cool.

  • Use remaining pie crust dough to roll a top for your pie. Or try using cookie cutters to create a unique top.
  • Bake pie for 20 min.
  • Remove from oven and let cool before serving. Top with ice cream or whipping cream if desired.
  • Caution: may cause family feuds over who gets the last piece!
