2020…To say the very least, it’s been a year. So many hardships and so much turmoil as we look around us. However, thanksgiving is coming. We might have to look a little harder, but we do have things to be thankful for.
A thankful spirit may take a little more effort but we are genuinely thankful! We are thankful for our families and friends. We’re thankful for our kids back to school! Thankful for the communities we have a chance to be a part of. Thankful for our great country we live in. We’re thankful for all the incredible foods we have access too – fresh apples from the tree, the squash harvested from the garden. As we sit and write this blog, we are so thankful!

Apple Squash Bake

Ingredients
1 medium sized butternut squash, chopped and cubed (approximately 5 cups)
3 granny smith apples, seeds and core removed, sliced 1/4″ thick
2 tbsp CUT Fall Spice Mix
1 cup brown sugar
1/2 cup CUT flour
3/4 cup pecans, chopped
1/2 cup butter, melted
Directions
- Preheat oven to 350°F.
- Chop and slice butternut squash and apples, transfer to medium sized baking dish.
- In medium sized mixing bowl, combine topping ingredients – flour, brown sugar, fall spice mix, pecans.
- Stir topping ingredients well. Pour over chopped butternut squash and apples in baking dish.
- Pour melted butter over, careful to try and pour slowly, covering all surfaces of ingredients.
- Bake with lid or cover dish with aluminum foil for 1 hour.
- Find your spirit of thankfulness and enjoy!
