Blueberry Muffins

This has to be one of the most loved, and sought after muffins. Everyone loves that bite filled with sweet blueberries. We knew this needed to be a recipe we needed to share with you all. Using no refined sugar, banana’s and the use of oats, these muffins pack a much greater nutritional punch then the normal cake blueberry muffin.

We love this recipe for so many reasons! Not only for it’s nutritional value but also for the fact it’s SO easy to make. You’re likely to have all the ingredients in your kitchen already. It will take little effort to enjoy these delicious muffins.

This recipe works great mixing by hand in a large bowl, or go ahead and use an electric mixer. We love our mixer so grab your ingredients and away we go!

Don’t over mix the batter once the blueberries are added. This will cause the berries to split open and your muffins will be purple…and have mushy berries! Both fresh blueberries and frozen blueberries work well for this recipe.

These delicious muffins are packed with a nutritional punch. Using blueberries, bananas, no re-fined sugar and oats, they guarantee stomachs will be full longer and happier!

Ingredients

  • Wet Ingredients
  • 1 cup mashed ripe bananas

  • 1 cup plain gluten-free yogurt

  • 2 eggs

  • 2 tbsp maple syrup

  • 2 tbsp lemon zest

  • 2 tbsp lemon juice

  • 2 tsp vanilla

  • Dry ingredients
  • 1 1/2 cup CUT Flour

  • 2/3 cup gluten-free quick oats

  • 2 1/2 tsp gluten-free baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 2 cups blueberries

Directions

  • Preheat oven to 350 °F
  • Combine together in large bowl wet ingredients. Mix.
  • Add dry ingredients and continue to mix well.
  • Stir in blueberries. Do not over mix.
  • Divide batter evenly into greased muffin tray.
  • Bake for 20 minutes. If using a stone baking pan, add additional 3-5 minutes to bake time.
  • Insert toothpick in middle of muffin, if comes out clean the muffins are ready.
  • Remove from oven and allow to cool slightly.
  • Pull muffins out of pan and place on cooling rack to finish cooling.
  • These muffins freeze well if needed. Although we’re pretty sure they’ll disappear quickly…
