A tried and true recipe! There are so many different variations of this great menu item…We decided to load ours with veggies and fiber and keep the mild southern heat that it’s famous for. Those of us (Stacey!) that like the heat can add the extra hot sauce. This recipe will be fit for everyone in your family… young and old. Although, maybe not the horses! LOL. We decided to share this incredible mug with friends and headed to the barn for some fun!

You can eat it from a bowl, eat it from a mug, pack it in a thermos or bring the entire crock pot wherever your adventures of life are taking you. There’s nothing better than on a crisp cool Canadian day, enjoying a mug of warm chili. Absolute soul food.

We love the use of the crock pot on this one. Dump all your ingredients in and let the crock do the work. Could it be any easier?!? Feel free to dice the vegetables as small as you need to hide them from little ones if you need. Use this recipe to load up bellies with extra nutrition and fiber.
You’ll need to begin by browning your ground beef and onions in a frying pan on the stove.
While this is cooking, start opening cans of tomatoes, dicing and slicing vegetables, mincing garlic, prepping some of your vegetables. Ensure if you are using canned goods that they are gluten-free. Watch for any glutinous preservatives that can sneak in processed, pre-packaged foods.
Don’t forget the beans! Really now, the debate of chili without beans?!? Is that even a thing?? Bring on the fiber.
Once your onions and meat are finished browning and fully cooked, go ahead and add this to your rainbow of veggies.

Ingredients
2 lbs lean ground beef
1 medium red onion, chopped
2 cans diced tomatoes(796ml)
1 can tomato paste(369ml)
1 can tomato sauce(398ml)
2 cups mushrooms, chopped
2 cups carrots, sliced
1 green pepper, chopped
1 can kidney beans (540ml)
1 can black beans(540ml)
2 cups frozen corn
4 cloves garlic, minced
2 cups gluten-free beef stock
1/4 cup honey
1 tbsp gluten-free worcestershire sauce
4 tbsp chili powder
4 tbsp cumin
1 tbsp cinnamon
1 tsp salt
- Optional toppings
sour cream
grated cheese
hot sauce, we love tabasco sauce in this one!
Directions
- On medium heat in frying pan, combine chopped onion and lean ground beef. Brown and cook thoroughly, stirring often.
- In large crock pot, combine all other ingredients.
- Add cooked meat and onion to crock pot.
- Stir very well and ensure everything is well mixed.
- Cook in crock pot on low heat approximately 8 hours.
- Ladle in your mug, pack in your thermos or cart along the crock…this recipe will warm anyone’s soul who’s lucky enough to share a bite.
