Cucumber Salad

Cool like a cucumber. We’d have to agree, cucumbers are cool and we’re pretty sure most people would agree. It’s the one vegetable that usually can sneak in kids lunches, on an appie tray, a restaurant salad and won’t be left. We love it’s versatility pairing with different food and a cucumber’s ability to casually pop flavour. We needed to honor the cucumber…LOL.

Setting out on our mission, we knew right away what we needed to do. We paired one of our families favorite vegetables with green onions and the rest followed naturally. Growing up eating cucumber salads we knew what was our favorite about this simple salad- fresh dill!

We can’t forget to mention that another incredible thing about cucumber salad is that it takes 5-10 min to make!  Let the games begin…if you have a mandolin for slicing, pull it out!  This will make things even faster.

WARNING! CAUTION! No laughing…this is a serious matter! Mandolins are SHARP as Stacey discovered slicing the tip of her finger. Well we suppose you can laugh. We sure did. But watch out…don’t make the same mistake. There is a guard for a reason. Use it. Enough said. Moving on.

Alright the bandaids are on, cucumbers are sliced, and green onions are chopped. Let’s continue by making the dressing.

Cool as a cucumber, this salad will warm your hearts. It’s definitely one of our families favorites. Who doesn’t love cucumbers? and who doesn’t love a salad fully prepped and a homemade dressing in under 10 min? It pairs with any foods and will satisfy every age and palate.

Ingredients

  • 6 mini cucumbers sliced

  • 3 green onions finely chopped

  • 1 tbsp fresh dill chopped very fine

  • Dressing
  • 1 1/2 tbsp sour cream

  • 1 1/2 tbsp mayonnaise

  • 1 1/2 tsp vinegar

  • salt and pepper to taste

  • optional** 1/4 tsp cayenne pepper

Directions

  • Slice cucumbers thin using a mandolin or simply with a knife.
  • Chop green onions and fresh dill.
  • Mix dressing ingredients.
  • Pour over cucumbers, green onions and dill.
  • Mix well to ensure all combined.
