Thai Chicken

The perfect recipe to follow a busy day of work, school or running around. It requires little time to prepare and yet it shows up as incredible! We love serving this for company of every age, as even the pickiest eaters can usually find a combo or de-constructed version they like. Perfect for families.

The green Thai curry paired with a coconut rice is an absolutely amazing combo. You can also use just plain rice or even noodles if you’d prefer. Toppings? We love banana, pistachio’s, and cilantro. However be creative! Don’t be afraid to try something different. Although seriously, the banana’s make it. Lol, the kids will also agree.

Getting this chicken in the oven will honestly take you about 5-10 min. How fast can you add ingredients to a saucepan and stir?! It’s so easy. Once your ingredients for the sauce are combined in a suacepan, simply bring to a boil and you’re ready for the next step. If you like a spicy curry, add more curry paste. If you’re feeding this to the “littles” maybe air on the side of caution and don’t add much. At any rate, we know from testing with numerous children that this recipe should be a win! Ha, a win for all ages.

Your sauce is prepared, chicken breasts in the pan, simply pour it over and get the pan in the oven!

A simple green Thai curry that your entire family will love. A coconut based sauce that allows you to add as much curry as you desire. Prepare either spicy or mild. We love to pair with coconut rice and top with bananas, pistachios and cilantro. Heaven.

Ingredients

  • 4 chicken breasts (If they’re large, cut in half)

  • Thai coconut sauce
  • 2 cans coconut milk (400 ml)

  • 1 tbsp gluten-free green Thai curry paste

  • 1/4 cup brown sugar

  • juice of 1 lime

  • Toppings (Optional)
  • bananas

  • pistachios

  • cilantro

  • rice

Directions

  • Preheat oven to 350°F
  • Pour coconut milk into medium saucepan.
  • Add curry paste to taste. If you like it more spicy add more than 1 tbsp. More mild? Use even a little less.
  • Combine brown sugar and lime juice. Whisk well and bring to a boil.
  • Place chicken breasts in baking dish.
  • Pour prepared coconut sauce over chicken.
  • Bake for 45 min or until chicken reaches internal temperature of 160°F.
  • Pair with rice or noodles of your choice. Top with sliced banana, pisatchios, cilantro, and extra curry sauce if you desire!

Not only will everyone love this recipe, it’s the perfect option for company and also freezes well. It’s almost too good to be true. We promise though it’s real and dang good!
