Rolled in a cinnamon sugar and infused with fall spices, these cookies were the perfect bite as fall began to show it’s cooler side.
As the rust and gold leaves were falling to the ground, this ‘cinnamony’ cookie goodness had a charming ability to pause the changing season – even if it was just for a minute. Lol, or maybe the sweet fall spice just made everything a bit more tolerable! Whatever the reason, we both loved this cookie and decided to bring it back.
We have brought back this beloved cookie with a twist your mother will LOVE! We’re even sure your grandfather would LOVE!
This recipe for Toffee Bite Cookies is filled with our favourite fall baking essentials. The blend of our CUT Fall Spice (https://cutcooking.com/cut-fall-spice-blend/), a cinnamony sugar topping, and a cookie loaded with TOFFEE bits, it’s absolutely heaven!
These heavenly cookies are so easy! We promise they will please every age and audience. Seriously, don’t wait to make these. There won’t be a bad review from anyone!
You should have all the ingredients probably already in your pantry needed for these cookies- except maybe the toffee bites. You’ll find these most likely down the baking isle at your local grocery store near the chocolate chips 😉
Combine everything in a mixing bowl and go! You’ll have fresh cookies literally in under 30 minutes.
Once the cookie batter is all mixed, you’re ready to create the sugary cinnamon goodness for the top of the cookies. In a separate bowl, combine the sugar and CUT Fall spice. With the added toffee bits, just a light toss to the top is suffice.
Completely rolling the cookie in this mixture isn’t necessary. The extra sugar tends to burn slightly on the bottom of the cookie. Just one top dunk in the sugar bowl!
Lastly before baking, slightly press flat the sugared dough balls with a spoon. This will allow the cookies to bake evenly.
Bake. Cool. Pour a glass of milk. Share with a friend.
Toffee Bite Cookies

Ingredients
1 cup butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
2 1/2 cups CUT flour
2 tsp CUT Fall Spice blend (https://cutcooking.com/cut-fall-spice-blend/)
1 1/2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
1 cup toffee bits (‘skor’ bits)
- CUT Fall Spice Topping
2 tbsp white sugar
1 tbsp CUT Fall spice blend (https://cutcooking.com/cut-fall-spice-blend/)
Directions
- Preheat oven to 400 F.
- Using electric mixer, combine butter and sugars and whip well.
- Add rest of ingredients in order listed. Mix cookie batter well but do not over mix.
- Combine the CUT Fall Spice topping ingredients in small bowl.
- Form cookie dough into approximately 1″ diameter balls on ungreased baking tray.
- ‘Dunk’ top of cookie ball in cinnamon topping and return to baking tray.
- Flatten ball slightly with back of spoon.
- Bake for 8 minutes.
- After slightly cooled, remove from baking tray to cool completely on cooling rack.
