Zucchini Sushi

Happy New Years! We’re so excited to share this post with you all. Whether you’ve made New Year resolutions to eat better, or simply need a “detox” from all the rich holiday foods; this is the perfect blog entry for you! Our Zucchini Sushi is a ton of fun to make and allows for so many different variations.

Lol, you’re all probably wondering “what is Zucchini Sushi?!” It’s simply veggies wrapped in different combinations and then served as a perfect bite. A vegetarian or vegan choice that all ages will enjoy.

Our kids are still ‘homeschooling’ this week due to covid curves, and so Zucchini Sushi has become our winning lunch option. The kids can roll their own sushi adding the veggies of their choice. We promise that it’s easier then you’d think and everyone will have fun!

Zucchini Sushi is an excellent choice for lunch, dinner or even a snack! Serve it as an appetizer or with a glass of wine. It’s ability to adapt to anyone’s mood, palate or age makes this the perfect bite as we roll out the uncertainty of this New Year.

We briefly already mentioned how easy it is to make, but seriously, get peeling, slicing and chopping veggies. Pull out the leftover Olive Tapenade from New Years Eve if you had any leftover šŸ˜‰ Stir the hummus and cream cheese.

Zucchini Sushi

Excellent for lunch, dinner or even a snack! Serve as an appetizer or with a glass of wine. It’s ability to adapt to anyone’s mood, palate or age makes this the perfect bite.

Ingredients

  • 1 zucchini, medium sized sliced lengthwise extremely thin

  • 1 carrot, medium sized, julienned

  • small bundle of fresh chives, leave long

  • 1/2 cup cherry or grape tomatoes

  • 1/2 english cucumber, medium sized, julienned

  • 1 avocado, peeled and either julienned if more “green”. Otherwise, mash and spread.

  • 3 tbsp cream cheese, spreadable

  • 3 tbsp hummus

  • 3 tbsp Olive Tapenade

  • Any other veggie’s you’d like to add!

Directions

  • Go ahead and slice the zucchini lengthwise using a mandolin. Ensure that you use the thinnest setting possible. (You can also use a knife, it’s just a bit more tricky!)
  • Decide on a “spread”. Use either the cream cheese, hummus or Olive Tapenade. Spread a thin layer on the zucchini strip.
  • Add whatever combo of veggies you desire in your “sushi” roll.
  • Starting at one end, roll tightly the zucchini strip.
  • That’s it. How much fun is this for January?! Enjoy!
